Ramona’s Hummus: Austin Food Truck Making a Meal Out of Hummus + GIVEAWAY

January 16, 2018 by Alyssa

Ramona’s Hummus is an Austin food truck making a meal out of hummus serving up hummus bowls topped with spicy meat and falafel, starring hummus in veggie-filled salads, and makes hummus poutine fries for those in need of a hangover cure. And it’s one food truck you’ve got to try.

I’m giving away two sets of BOGO cards to Ramona’s Hummus. Find details on Instagram.
Winner announced on Saturday, January 20th.
Ramona's Hummus Falafel Bowl

If you don’t know by now, hummus is my favorite food. If it’s on a restaurant menu, there’s 110% chance I’m ordering it. Garlic hummus, curried hummus, beet hummus, whatever it is, I love it. (Except dessert hummus, someone made a mistake when they put chocolate and beans together…)

But none the less, I love hummus and Ramona’s Hummus is my favorite, crave-able spot to get my fix.

I’ve seen the evolution of Ramona’s Hummus from its days as a pop-up shop, cooking on a hot plate and a folding table through menu development and recipe testing, and now, as a full-fledged food truck. And with each visit, I find myself loving it even more.

Ramona’s Hummus

I first met Ramona’s Hummus chef and owner, Will Elman, when I professed my love for hummus to him at Hops & Grain Brewing early last Summer. The moment I tasted Will’s recipe, I was in love. Ramona’s Hummus is thick, creamy, and heavy on the tahini. If you’re a hummus connoisseur, you’ll find Ramona’s hummus is more in line with a Israeli or Palestinian style of hummus. And it’s damn delicious.

About Ramona’s Hummus

While chatting with Will over the course of many visits, I learned his hummus inspiration came from a friend’s Mom (Mona) who he refers to as the Queen of Hummus. The truck’s name is a nod to Mona, although Will developed his own hummus recipe which starts with dried beans that he soaks overnight before mixing with a few other secret ingredients.

Ramona's Hummus Pita

Hummus and salad with soft-boiled eggs

Will, a self-taught cook, having only worked a few miscellaneous restaurant job, also developed his own pita recipe. It’s baked in a pizza oven at DeSano Pizzeria, creating a soft yet chewy pita, adding to its authentic flavor and making it the perfect accompaniment to the savory, thick hummus.

What to Eat

Ramona's Hummus Menu

Ramona’s Hummus Menu

My favorite Ramona’s Hummus menu item is the Hummus Bowl that comes with pita and cucumber salad.  I typically add spiced chicken or an egg to round it out! The chicken is slightly spiced, just enough to add a bit of heat and pairs nicely with the cucumber salad. As for the egg, Ramona’s eggs are simply perfection and if you’ve never had an egg with hummus then you’re definitely missing out.

I also love the Hummus Bowl with Ramona’s gluten-free falafel for a full-vegetarian lunch! The falafel’s extra crispy on the outside but light and fluffy with a touch of spice on the inside from ancho chiles! YUM!

<3M loves the Pita Sandwich with Beef Shawarma (though, he often has a tough time deciding which is better — chicken or beef because they’re both seriously so delicious). The Pita Sandwich is packed caramelized onions, pickled veggies and a heavy serving of hummus in place of a sauce. <3M tops his with a hefty helping of Ramona’s homemade hot sauce, a fresh cilantro jalapeño mix!

Ramona's Hummus

Salad Bowl with walnuts, pumpkin seeds and pomegranate

Ramona's Hummus Hot Sauce

Homemade hot sauce

If you’re looking for something a bit lighter or another veggie option, then the Hummus Salad is a great choice. Will mentioned the salad’s a big hit with the weekday office-lunch crowd! In the Hummus Salad, you get a little bit of everything — creamy hummus, cucumber salad, pickled veggies, plus some crunch and a bit of sweetness from walnuts, pumpkin seeds, and pomegranate arils! It’s a light mix of savory, tangy, and salty! You also have the option to add a protein or egg on the side! (DO IT!)

And to wash it all down, a tart mint lemonade blended fresh to order. Ahhh!

Where to Find Ramona’s Hummus

Like any food truck, Ramona’s Hummus is a wanderer. Your best bet is to check their website or Instagram page for exact locations and timings.  But most weekends, you can find Ramona’s Hummus at a local brewery serving up lunch and dinner — just look for the big yellow truck with Ramona’s face. And when you’re there, say hi to Will — tell him Alyssa sent you.

Merit Coffee: Austin’s new, modern downtown coffee shop

January 3, 2018 by Alyssa

Austin’s new downtown coffee shop, Merit Coffee, is modern and inviting while serving up rich coffee and fresh pastries from San Antonio’s Bakery Lorraine.

It seems like the ‘in’ thing right now is to a hard-core coffee lover. I’m talking about those people who spend a ridiculous amount of money on a bag of beans, wake each morning to grind them fresh, and then patiently wait for a french press to finish brewing just to have their first cup of coffee in the morning.

Merit Coffee

I am none of those people.

I love me a good K-cup and my favorite coffee comes pre-ground, in bulk at HEB. In fact, sometimes I even brew a pot on Sunday, refrigerate it, then drink it over the course of the next few days as iced coffee or by reheating it in the microwave. (The horror, I know!)

But, with all that said, I do appreciate a good coffee shop.

And the other day, I stopped by the new Merit Coffee located in the Seaholm Center and absolutely loved this new-to-Austin coffee shop!

Merit Coffee View

Merit Coffee Entrance

Merit, previously Local Coffee, is originally from San Antonio where the company has multiple locations. When I walked into Merit during my first visit, I instantly knew this shop would fit right in with the Austin culture.

Merit Coffee is simple, not at all over overwhelming and includes the basics of any great coffee shop. The interior was bright and full of natural light with modern finishes.

Merit Coffee Menu

Merit Coffee Ordering

It’s an inviting space for anyone who likes to linger over a cup of coffee to chat with a friend or wants to settle in with their laptop to get a little work done.  Many people were lounging in the shop and at the multiple outdoor tables around the coffee shop. I definitely see Merit Coffee being a buzzing place for those near Seaholm or visiting the new Austin Central Libray.

Bakery Lorraine Toaster Pastries

Bakery Lorraine Kolache

Bakery Lorraine Macaroons

The best part in my opinion though, are the baked goods Merit Coffee is serving up from San Antonio’s Bakery Lorraine like beautiful macaroons and toaster pastries (fancy pop-tarts to us laymen)! And obviously, Merit couldn’t come to Austin without adding a local touch! The shop’s also offering TacoDeli breakfast tacos and juice from Juice Society.

Merit Coffee Drinks & Pastry

Toaster Pastry

On one visit, I snagged a classic cold brew coffee from Merit Coffee and a strawberry toaster pastry from Bakery Lorraine! (Pro-tip, ask the barista to warm up your pastry, you won’t regret it!). Although I’m no coffee expert, I loved the cold brew with a splash of cream — smooth, silky and delicious!

Toaster Pastry

The Bakery Lorraine hand pie was sweet and buttery from the pastry while the frosting was thick with the classic pop-tart shell we all remember from our childhood.  This treat was a definite indulgence that was oh, so worth it and much more refined than the classic pastry I grew up eating.

Hippy Bar

Another day, I grabbed a Hippy Bar and a classic batch coffee. The batch wasn’t anything mindblowing but the Hippy Bar was delicious! It’s hearty with a touch of peanut butter and dried fruits.  Though still a treat, it was a bit on the healthier side in comparison to the toaster pastry and something I’m craving more of now!

Merit Coffee Entrance

If you’re in the area, I highly recommend checking out Merit Coffee for a sip and a treat! I know I’ll find myself back at Merit Coffee soon to relax with a cup of coffee and another Bakery Lorraine Hippy Bar!

Barley Swine Chef’s Tasting & Our Holiday Tradition

December 27, 2017 by Alyssa

The Chef’s Tasting at Barley Swine is a must for Austin foodies! It pairs Austin’s culinary creativity with the city’s laid-back, local culture. It’s an evening full of great food, friendly service, and will leave you wanting to come back again and again.

Without any family in Austin, <3M and I have started making our own Christmas traditions and one of them is to head to Barley Swine to enjoy the 10-course Chef’s Tasting. It’s something he and I really look forward to each December, knowing it will be a night of great food, good wine, and friendly service. We also love comparing our meals from year to year and get excited to taste the latest menu.

View of the Barley Swine Kitchen

Barley Swine’s Chef, Bryce Gilmore, & his kitchen are also very accommodating to specific food preferences which makes the meal even more special as the menu avoids fish for <3M while ensure I don’t receive any beef & pork.

His and her custom menus

<3M and I typically do the Chef’s Tasting on Christmas Eve, but this year, Barley Swine chose to close on Christmas Eve to allow their staff to spend more time with their own friends and family, so Mayank and I chose to have our special dinner on Saturday, December 23rd.

<3

We started the meal with a glass of sparkling rose — because it always feels a bit fancy and I love starting a great meal with a special glass of bubbly.  We also asked our server, Cruze (spelling?), if we could take the meal a bit slower than the normal pace as <3M and I I really like to enjoy the food, each other’s company, and watch the kitchen.

If you’re a fan of watching your food being assembled and seeing a variety of dishes, ask to be seated at the Chef’s Counter when making your reservation at Barley Swine — and yes, always make a reservation for dinner, they’re quite busy!

Cruze was great the entire night and 100% accommodating to our request for a super slow meal. He had a few bottle recommendations for us and brought us a tasting of each.

If you ever want to explore wine outside your comfort zone, I highly suggest doing a blind tasting then picking the bottle of wine that spoke to you most.

<3M and I did a blind tasting at Barley Swine and ended up choosing Mocavero Puteus, Negroamoro blend which is far from my typical California Cabernet Sauvignon pick.  We loved it and it paired nicely with each course throughout the meal.

Chef, finishing up the plating

Once we had settled in for the evening with drinks, the tasting began!

Although there are 10 courses, the plates are well portioned and while we always leave feeling full, we never leave feeling like we just wrapped a Thanksgiving dinner which is more of a marathon of eating! Here’s a look at our menu!

Garden Cookies

Barley Swine's Chef Tasting

Spanish mackerel, turnip slaw

Barley Swine's Chef Tasting

Shishito pepper, onion dip – Best shishito I’ve ever had, it was such a wonderful sweet & spicy pairing!

Barley Swine's Chef Tasting

Chicken Skin, deviled egg – How can you not love fried chicken skin with deviled egg filling?

Barley Swine's Chef Tasting

Sweet Potato, brown butter, ricotta, seeds – I really loved all the seeds in here and the crisp bites of sweet potato

Barley Swine's Chef Tasting

Creamed cabbage hand pie – my favorite dish of the evening. The pastry was out of this world perfection!

Barley Swine's Chef Tasting

Red snapper, mushroom butter, bok choy

Barley Swine's Chef Tasting

Grilled quail, carrot, pecan – such a unique preparation of quail, it’s a quail leg stuffed with sausage.

Barley Swine's Chef Tasting

Oyster mushroom, potato, green bean – I loved the potato here and the meaty mushrooms!

Barley Swine's Chef Tasting

Apple, lemongrass, chevre – I thought I’d love this but it was probably my least favorite of the night which doesn’t mean it wasn’t good, I simply had high expectations when reading the dish’s flavor combination on the menu.

Barley Swine's Chef Tasting

Spiced sfingi, espresso, butternut squash — The espresso here was so mellow and paired nicely with the light sweetness of the squash. And in case you didn’t know, sfingi is a little Italian donut-like pastry!

Barley Swine's Chef Tasting

I love all the pickled vegetable decor. There’s something so wonderful about food decorations.

Although <3M and I typically visit Barley Swine in December, they have an awesome menu year-round that changes with the season. I recommend visiting and checking out some of the menu items during their Swine Time happy hour Sunday-Friday from 5:00-6:30pm! It’s a great way to indulge on a budget while still enjoying Barley Swine’s culinary creations!

Bee Delightful: CBD-Infused Dinner Pop-Up

August 8, 2017 by Alyssa

The Bee Delightful dinner pop-up featured a CBD-infused menu and highlighted the benefits of CBD-lifestyle products while benefiting local Austin bees.

This past weekend I had the opportunity to attend the Bee Delightful Dinner pop-up as a guest of Chef Preston Day who is also the Chief Operating Officer at Bee Delightful.  Bee Delightful is an Austin based honey producer that makes a CBD-infused honey called Rescue Blend™ of Canna Bees™. The dinner featured a CBD-infused menu, which highlighted the benefits of CBD-lifestyle products with all ticket proceeds benefitting local Austin bees.

Canna Bees CBD-Infused Honey

If you aren’t familiar with CBD, it’s a cannabinoid derived from Cannabis plants like marijuana and hemp, with CBD oil from hemp being 100% legal in Texas. Although similar to THC, the psychoactive ingredient found in marijuana, CBD does not produce a ‘high’ but does emphasize relaxation without any form of bodily impairment.  CBD is touted to offer many benefits —

  • serving as an antidepressants
  • reducing anxiety
  • acting as an anti-inflammatory
  • aiding in relaxation
  • reducing chronic pain

Canna Bees CBD-Infused Honey

Bee Delightful is an inspiring company that rescues honeybee hives at-risk of extermination and safely transplants them to their sanctuary in Liberty Hill. Bee Delightful then uses treatment-free, organic farming to harvest the rescued honey to make their hemp-infused honey, Rescue Blend™ of Canna Bees™.

As the sponsor of the event, many of the menu items featured Canna Bees™ honey which you can purchase locally at Thom’s Market or LazyDaze in Austin. While at the event, I had the opportunity to try the differentCanna Bees™ honey varietals with the rich Wildflower Honey being my favorite! It’s so good and I’m tempted to use it in my own recipe for Honey Lavender Sugar Cookies!

Without truly knowing what to expect from the CBD-infused menu by Chef Tiffani Janelle and Chef Preston Day, each bite I had Saturday night far from exceeded any expectations I could have imagined. The menu was fresh, innovative, and delicious. The venue itself was gorgeous — set to the backdrop of East Austin while incorporating local art, beautiful table settings, and a welcoming, warm environment.  Below is a glimpse of my evening and a sampling of the event’s menu:

Iron Cactus: Summertime Dining

July 29, 2017 by Alyssa

Summertime dining options at Iron Cactus star seasonal ingredients, perfect margaritas, and decadently delicious desserts!

I received a complimentary meal at Iron Cactus. All opinions and images below are my own.

The first time I moved to Austin was in February 2011 (yes, I moved here twice…) and the very first restaurant I dined at upon arriving was Iron Cactus on Stonelake Boulevard in North Austin. It was my first taste of Mexican food outside of New York’s chain restaurants I grew up eating (Taco Bell). It was such a special moment in my life, moving to Austin, that I even remember what I ate at Iron Cactus for dinner that night — Ahi Tuna Salad with a side of chips & queso, of course!

It was such a special moment in my life, moving to Austin, that I even remember what I ate at Iron Cactus for dinner that night — Ahi Tuna Salad with a side of chips & queso, of course!

When I lived in North Austin, <3M and I used to visit Iron Cactus on date nights (when we could afford it…we were poor, fresh-out-of-college kids at the time!) but since moving to South Austin about 5 years ago, we haven’t been back. Not because we didn’t enjoy the food or drinks, but simply because ‘out of sight, out of mind.’

Iron Cactus Drinks

When Iron Cactus reached out with an invitation to join them in celebration of their Summer menu that starred fresh corn and seasonal crab, I couldn’t help but say yes! <3M and I were excited to reminisce about our past life and see if Iron Cactus lived up to all its initial ‘new-to-Austin’ glory!

For our meal, <3M and I were each treated to a 3-course selection plus drinks. Below are my thoughts on the meal with a few truly drool worthy photos!

We started our meal with a couple margaritas. I enjoyed the El Perfecto margarita and happily ordered round 2 when I quickly sucked down my first glass. <3M went fancy with his drink and ordered a frozen mango margarita.

Although I love mango myself, I wasn’t a huge fan of the mango puree as it was too sweet for me. But, if you don’t enjoy the flavor of tequila or prefer sweeter drinks, then this margarita is perfect for you!

Crab Stuff Jalapeños

<3M and I shared the two appetizers, Crab Stuffed Jalapeños & Picadillo Purses. The Crab Stuffed Jalapeños had a kick to them but the cream cheese filling smoothed out the heat of the pepper. I was also pleased to find the crab to be a prevalent flavor that wasn’t lost among the spice & cheese.

The Picadillo Purses weren’t our favorites and both <3M and I preferred the Crab Stuffed Jalapeños. The purses reminded me of a shepherd’s pie stuffed into a wonton wrapper with the ground beef and specs of corn. I felt the star of this appetizer was the sauce. It left me wishing we had a bit of bread to dip it in because it was that delicious.

Pollo Rellano

For dinner, <3M ordered the Pollo Relleno chicken which was stuffed with the tastiest cornbread ever and topped with a jalapeño cream sauce that made my mouth all sorts of happy! I had serious order envy when I tasted <3M’s dinner and definitely took more than a few tasting bites from his plate.

Hickory Smoked Salmon

For my meal, I ordered the Hickory Grilled Salmon. This dish was delicious but I was surprised overall as I was expecting a lighter meal based on the menu description.

My favorite part about this dish was the fresh succotash with asparagus, corn, and hearty chunks of crab meat throughout. The salmon was cooked perfectly, the waiter even asked my preference when taking the order! Although I truly enjoyed the jalapeño cream sauce on the Pollo Relleno, I was wishing for more freshness and something not quite as heavy to pair with the salmon. Overall, still a great entree!

Tartlet

When it came to dessert, I couldn’t decide which I liked best. The presentations were out of this world stunning. Almost too pretty to eat. Almost.

I loved the Margarita Key Lime Tartlet for its crumbly, nutty crust and tart lime filling but the Dulce De Leche Cheesecake, made with boñuelo crust (which we learned from our host, Victoria, is like crispy fried dough) was so decadent, creamy, and perfectly sweet — and this coming from a girl who usually doesn’t like cheesecake!

Cheesecake

I truly enjoyed our meal at Iron Cactus North and it brought back wonderful memories from my first few weeks in Austin. My advice for your visit is to start with their El Perfecto margarita (with salt of course) and save room for dessert because both options we tried, the Dulce De Leche Cheesecake and Margarita Key Lime Tartlet, were out of this world delicious!

Many thanks to Iron Cactus and its staff for a great night out!

Vert’s Mediterranean Spring Plant-Powered Dinner + Giveaway

March 7, 2017 by Alyssa

This post was updated on March 15th, 2017 with giveaway winner.

I attended the Spring Plant-Powered dinner as a guest of Vert’s Mediterranean Grill. All opinions are my own and I was not asked by Vert’s to share this experience, I’m doing so because I truly enjoy dining there!

Vert’s Mediterranean Grill’s Spring Plant-Powered dinner showcased culinary creativity, featuring flavor Spring ingredients!

What do you think of when you think Vert’s Mediterranean Grill?

I used to think of Mediterranean food in a Chipotle-esque type atmosphere. A ‘choose your own adventure’ type meal — whether it be bowl, wrap, or salad where you mix in your favorite protein, toppings and sauces. The end result was always great food, that’s super filling, super fresh, and super flavorful. Believe it or not, Vert’s Mediterranean Grill is seriously the only fast-food (fast-casual) restaurant I’ll eat it (ask <3M — there’s no BK, Wendy’s or Whataburger in our life).

Vert's Mediterranean Tablescape

Vert’s Plant-Powered Tablescape

Based on my above confession, it’s obvious that I love Vert’s Mediterranean Grill but last month, I had a significantly different experience at Vert’s when I was invited to their Spring Plant-Powered dinner at their test kitchen near the UT Campus. This experience solidified my love for Vert’s Mediterranean Grill! It also reinforced how much Vert’s cares about ingredients, culinary creativity, and the overall dining experience!

Vert's Mediterranean Plant-Powered Menu

Plant-Powered Menu

Simply walking into the dinner last month, I knew the entire meal experience was going to be different than previous ventures into Vert’s. <3M & I were greeted with a glass of sparking rose  that I couldn’t put down the entire night — Graham Beck Brut Rose might be a new favorite and one I’m still craving today! When looking around the restaurant, I noticed that the tablescapes were beautifully decorated to match the Plant-Powered theme with eucalyptus leaves, seasonal vegetables like bright purple cabbage & beets, and elegant floating votives.

Vert’s also amped up individual place settings with earthy, wooden plate chargers, gold sparkly placemats, gold utensils and the world’s prettiest geo-shaped napkin rings! Each setting was personalized with place-cards written in gold paint on a real leaf.  They truly went above and beyond to set the tone for this meal — classy, yet fresh and comforting and of course, delicious.

Plant-Powered Collage

Grapefruit and Holy Basil Gin & Tonic / Marinated Olives & Carrots / Black Eye Pea Hummus

I truly enjoyed the Spring Plant-Powered dinner at Vert’s Mediterranean. With each dish I sampled, I was beyond impressed with how Vert’s elevated their culinary creations — it was like nothing I had experienced at a ‘fast-food’ restaurant before!  Vert’s chefs added a sous vide duck egg to the top to their babaganoush and while they egg looked softly poached, it was actually fully cooked and a decadently creamy spread on their warm pita bread!

Babaganoush

Babaganoush with Duck Egg

Beets

Beet Tartare with Fried Goat Brie Rine

I also enjoyed the fact that Vert’s chefs chose elevated ingredients like morels for their turkey meatballs. They also introduced zhug, an ingredient the other food bloggers and I weren’t at all familiar with, but now know as a type of Mediterranean hot sauce made with parsley. I personally found it similar to chutneys served with Indian cuisine.

Turkey Meatballs

Turkey & Mushroom Meatballs with Zhug

To end the meal, the chefs tackled jackfruit for a vegan take on the braised pork Vert’s typical serves in its restaurants. Although not my favorite dish, and executed a tad differently than other jackfruit meals I’ve enjoyed, it was still admirable and unique and I especially liked the chickpeas!

Jackfruit

Braised Jackfruit & Butternut Squash

Overall, I can’t say enough about how much I enjoyed Vert’s Mediterranean Grill’s Spring Plant-Powered dinner. It truly spoke volumes to how much Vert’s cares about the culinary process, the type of food they serve their customers, and the importance of offering quality, delicious menu items.  This meal was obvious an inspiration for new menu items to come to Vert’s restaurants in the future and I can’t wait to see what they roll out with this Spring & Summer.

Loving This Week 3

March 4, 2016 by Alyssa

Loving This Week

I hope you all had a great week! Mine was super busy at work. Strangely, I always feel at my best when I’m juggling multiple things and have a completely filled day with problems to solve! Lucky for me, I also love the people I work with so not only is the job rewarding but fun!

Although this week has been a bit busy, here’s a few things that I came across that made it extra special.

<3M and I celebrated our 2 year (Indian) wedding anniversary at Juniper on Saturday. Juniper has quickly become our favorite restaurant in Austin. Each time we’ve eaten there and each dish we’ve tasted has been spectacular. I look forward to each visit and can’t wait to go again for my birthday in April. One of these days, I’ll have to do a full review!

Juniper Anniversary

Forgive the photo quality of a nighttime iPhone picture

I work in tech, specifically around a lot of mobile devices/products but just this week a co-worker showed me the iMovie app for iPhone. I had no idea how easy the app was to use and it produces beautiful videos in mere minutes on your phone. I can’t wait to take a few videos of our dogs to post. This has definitely become a must have app for me! I highly recommend checking it out.

iMovies

A new obsession as of late has been kombucha in the evenings in place of a glass of wine. I treat it as a special drink and even get a bit dorky by pouring it into a wine glass to make it a bit more classy (and also to trick myself into thinking I’m drinking wine). It definitely helps me relax after a long day at work – plus it’s a healthy swap since kombucha has a slew of health benefits specifically aiding the body with digestion.

Kombucha 2

My favorite brand of kombucha is Buddha’s Brew.  It’s local to Austin and you can find it pretty much anywhere in the city. You can even buy it at Farmer’s Market or on tap at Whole Foods, which makes stocking up on large quantities easy and affordable.

Although I’ve tried different brands, I can’t help but come back to Buddha’s Brew because of its great flavor offerings and it’s bubbly everesence that tops all others I’ve tried. If you pick up a bottle, try one of my favorites — Pineapple Super Greens, Blueberry, Tangerine & Sea Salt or Peach Mint!

One last thing I’m loving this week is this Skimm the Vote article that summarizes all the presidential candidates. Since it’s obviously an election year, and I believe it’s important to know where each candidate stands, this article gives a great run down of who’s who and whether they are yay or nay all on the important subjects. The Skimm

Also, if you haven’t heard of The Skimm before, I highly suggest you check it out. It’s a weekday newsletter delivered straight to your inbox that gives you a cliff-notes version of the day’s trending news topics — from politics and controversy to celebrity and sports. It’s a really great way to stay informed about what’s happening around the globe with a quick 5 minute read. Sign up here!

That’s about it for this week! Hope you all have a wonderful weekend, and if you’re in Austin, get out and enjoy the weather! I have a biking adventure planned with <3M on Saturday and on Sunday, we plan to relax and head out to a winery for a tasting and lunch!

What made your week extra special?
Is that anything you’re loving?

Artichoke & Leek Fritatta

April 28, 2015 by Alyssa

Our 2nd CSA box from Johnson’s Back Yard Garden contained a lot of the same veggies as last time – which meant we repeated a few of the recipes from the first box and threw in a few new ones too.

Photo from of JBG, Week of April 20th CSA Box

Photo from of JBG, Week of April 20th CSA Box

Artichokes & Leeks – I really hate fresh artichokes. They’re so fussy and the end result is hardly worth my efforts. Personally, I’m more than wiling to pay a premium at the grocery store to have someone else do all the prep work so I can easily begin cooking with just the artichoke hearts.

That being said, I did waste a half hour of my life trimming the ‘chokes, steaming them and plucking out the rich hearts in order to make an Artichoke & Leek Frittata (recipe below). It’s something I’ve made before, it’s delicious, healthy, and filling. We enjoyed ours as is but it’s also great served with a side salad or some garlic bread!

Fotor_143026165678924_1

Beets  – If it ain’t broke, why fix it? I went with the same pickled beet recipe as last time and am still enjoying them on my salads and in wraps for lunch!

Carrots & Red Spring Onions – Carrots in our house usually end up as hummus dippers on the side of a salad or as roasted carrot fries, as last time. But with this CSA box, I wanted to get a little creative and was inspired to make a carrot soup.

The bright orange color and the fresh carrots just sang spring, making this soup delicious, filling and satisfying.  The soup is very simple with only a handful of ingredients but the result is a refined, slightly spiced, carrot soup.  I garnished our soup with some homemade, roasted chickpeas which gave the soup texture and a wonderful crunch. Here’s a recipe similar to what I made for both the carrot soup and the spiced chickpeas.

Carrot Soup, Tahini Kale Salad & Spiced Chickpeas

Carrot Soup, Tahini Kale Salad & Spiced Chickpeas

Kale – Sometimes simple is best. This time around, I made a simple kale salad with a tahini-lemon dressing massaged into the kale. This salad is flavorful, slightly nutty and has a fresh, spring lemon flavor that compliments the earthiness of the kale. We paired the kale salad with the carrot soup and topped the salad with more of the roasted chickpeas. I’ve detailed the kale salad recipe below.

Parsley – Last CSA box, we really enjoyed the Chimichurri sauce and used the leftovers as dressing on salads for lunch the remainder of the week. So when we received another beautiful bunch of parsley, I had to recreate the Chimichurri sauce once more.  We topped both grilled chicken and grilled salmon with the sauce. While creating the sauce, I also utilized a few of the red spring onions from our CSA box.  This time around, I did tweak the Chimichurri sauce, reducing the olive oil by half and swapping in vegetable stock to ‘healthily’ it a bit.

Romaine & Spinach – At heart, I’m a true salad lover. So our two heads of romaine and bundle of spinach were quickly turned into salads for lunch, wilted into tomato, feta, and spinach omelets and made into lettuce buns for turkey burgers, keeping with the low-carb dinners.

A light, easy meal! Great for a weeknight dinner or weekend brunch.
Serves: 4
Ingredients
  • 2 medium leeks sliced and cleaned
  • 8 artichokes heart, chopped into ½ inch pieces
  • 1 tablespoon, chopped fresh tarragon (or 2 tsp dried tarragon)
  • ½ teaspoon salt & ½ teaspoon pepper
  • 4 eggs
  • ½ cup non-fat ricotta cheese
  • 2 Tbsp all purpose flour
  • ½ teaspoon baking powder
  • ½ cup grated Parmesan cheese
Instructions
  1. Preheat oven to 425 degrees
  2. Spray an 8x8 or 9x9 oven proof pan with olive oil or non-stick spray and set aside.
  3. In a medium bowl, whisk together the eggs and ricotta. Whisk in the flour, salt, pepper, Parmesan, and baking powder. Set aside.
  4. Spray a large skillet with olive oil and place over medium-heat on the stove. Once warm, add the sliced leeks and gently cook until softened, about 10 minutes stirring often to avoid excessive browning.
  5. Once the leeks are cooked through and softened, add the artichoke hearts to the skillet until warmed then remove from heat.
  6. Gently stir the artichokes and leeks into the egg mixture. Note that the color of the mixture may change, don't worry if this happens, it will go back to normal when cooked.
  7. Pour the mixture into the prepared 8x8 or 9x9 baking pan and place in oven to cook for 20 minutes. After 20 minutes, the top should be slightly brown check for doneness by pricking a toothpick into the center. If it comes out clean, it is done. If not, return to over for 5 additional minutes and repeat toothpick process until the toothpick comes out clean.
  8. To serve, cut into 4 large pieces and sprinkle each with a bit of additional Parmesan.

One Year of Fostering..

December 2, 2014 by Alyssa

A year ago at Thanksgiving, <3M and I began volunteering with Austin Boxer Rescue as fosters. We began with the intention of fostering a dog until we found one that truly fit our family and could be a true buddy with our puppy girl Stella. One year and 5 foster dogs later, we don’t have a new, permanent furry resident but we do have a few lessons learned and many fond memories as foster parents

Saying Goodbye
A lot of our friends ask how we could love a dog for a few weeks or months then one day, most of the time unexpectedly, say goodbye.  Since saying goodbye to our first foster Jack (ABR – Sean) we’ve learned that each dog has a family it’s destined for.  Although we’ve loved each of our fosters, we’ve been able to objectively look at each temporary family member and pinpoint why that dog isn’t the perfect fit for our family and kept these reasons in mind when kissing the pups goodbye, reassuring ourselves we made the right decision by letting him go.

We also learned that saying goodbye is not only hard on us but also on our puppy girl Stella. Each time a new friend comes and goes, Stella goes through a short mourning period – often watching for her friend from the window, worriedly whining about their whereabouts, feeling she needs some extra love and cuddles, and being too heartbroken to eat. This is by far the hardest part for us, not saying goodbye to our recent foster, but watching Stella work through the goodbye without fully understanding.

Every dog has a story
Each dog has a background that’s shaped him into the dog they are when we receive them.

Jack arrived to us with mange.

Jefferson came to us with cuts and bite marks.

Apollo (ABR La Bamba) was surrendered by his owners.

No matter how they ended up with us, we always tried to remember that these dogs needed to feel safe, cared for, and loved. They were all scared, confused, and had been sleeping in a different place each night. What they needed was a calm environment and a steady routine to bring their life back to normal.

Apollo So when they have a small accident on the carpet or become a bit territorial over a toy, blanket, or human – we often had to remind ourselves that our fosters are still in training. That somedays, we just have to bend down, clean up the mess and remember that they’re still learning how good life truly can be.

Every Dogs Has a Perfect Family
After having a dog in your home for a while, you come to know what exact needs they require in order to get adopted and begin looking for that perfect family – the family that fits the dog to be their forever home.

Sean : Jack 2 You learn that your foster won’t fit the needs of every family that finds their fuzzy little face adorable. You learn how to nicely direct the family to a better fit while petting your foster pup and letting them know, as another potential adopter walks away, that it wasn’t meant to be and that his future family is still out there.

Jefferson was one in particular that <3M and I had a hard time letting go but we knew he wasn’t a great fit for our family and that he needed some special attention to break his overprotective nature. Jefferson found his forever Daddy one adoption day. His behavior has improved greatly and he’s now a daily presence at the gym his Dad owns! Knowing Jefferson found the right fit in his adoptive home gives us peace of mind, in knowing we made the right decision in letting go and taking the time to find him the right family.

Jefferson & Dad When it came to Kringle, we knew exactly what type of family to match him with. We lived in an apartment and he simply needed more room, he had a ton of energy and needed space to let it all out. Kringle needed a place to run and stretch his legs – he needed a backyard. One adoption day, he met a Dad looking for a fur-brother to keep his current boxer entertained when his 2 little girls weren’t around. Kringle met his potential fur (and skin) sisters and it was a perfect match. The girls play with him to keep his energy level in check and when they’re away, Kringle has is fur sister to play and tumble with in his very own backyard!

Apollo, our most recent foster, was a rambunctious 2 year old who becomes a little too playful when having another dog around. He also needed a lot of attention in order to become properly trained on a leash. Getting to know Apollo over few months he was with us, we came to learn that he’d be best as a solo dog. When it was just him and I, this guy was super cuddly, super responsive and just simply wonderful. As we meet potential adopters, <3M and I knew to keep our single dog family recommendation is mind in order to ensure Apollo’s match truly would be his forever home.

Sean : Jack

It’s hard. And Fulfilling.
Fostering’s hard. It requires patience and understanding. It requires sacrifice. And sometimes it’s heartbreak for all those involved. But overall there’s joy in know that even for a short period of time, you were able to share your home and love with an animal who truly needed and appreciated it. Who with your love and attention, was able to regain that sparkle of love and trust in their eyes.

Hopdoddy: you secretly disappoint me

January 30, 2014 by Alyssa

I have this group of constant girlfriends here in my life in Austin.  And luckily, all of our guys get along rather well too! Maybe it’s due to their shared obsession with an Austin-based burger bar – hopdoddy.  So obsessed with the joint’s beefy “goodness” that they were willing to subject themselves to the torture of hopdoddy’s hottest, spiciest burger  to date – the ghostland burger.

For my own entertainment, I was sure to record their spicy venture into manhood.

So, even though they clearly didn’t enjoy the ghost burger, after this feat, their obsession with hopdoddy only grew. Part of their obsession is spelled out in its name itself.
Let me break it down for you….

hop: handcrafted beer [since they only serve local, craft beer]
AND
doddy: the nickname given to the Scottish cow [aka beef]

Therefore, hopdodddy = beer & beef

beer burgerhopdoddy consider burgers & beer to be the perfect culinary merger and they consider themselves the creator of THE perfect burger-beerr union.  Now, it definitely makes sense that the guys in my life would be drawn to a burger-beer place on a regular basis but what doesn’t make sense is why they’re drawn to hopdoddy over any other burger place in Austin.  Personally, I’ve only been left disappointed or frustrated during my visits and I’ve been dragged there often enough that I’m entitled to an opinion.

I realize I have a bit of a bias since I’m a “veggie loving hippie” but even if they served the world’s greatest veggie burger, I’m not sure I would ever visit hopdoddy solo without the friends-social aspect to persuade me.

So here’s my ode to hopdoddy, venting my frustrations.
Hopefully they hear me, and if anything, maybe they’ll take a suggestion or two….

hd logo

1. You make me stand in a line outside the restaurant only to get inside and stand in another line (for drinks) followed by a third line to order my food.
WHY AM I STANDING IN THREE DIFFERENT LINES?! I thought I was standing in the first line to order food. Alas, I was wrong, the first line was the line to get into the AC / heat (whatever be the season).  The second line is to mosey past the bar and out of boredom order a cocktail [the hopdoddy moneymaker line]. The third line is the line I thought I was waiting in all along – the line to order food [queue angels singing here].

line

2. When I’m about to about to step up and order my food, you hit pause and let other people move forward in front of me.
I get it, I came with 5 friends and you don’t have a table available to accommodate the 6 of us but it’s just plain sad that after I spent an hour and 8 minutes waiting in both of your lines, you push me to the side and force me to watch the 2-party patrons place their orders and wander to their seats. Couldn’t you at least let me and my friends get a soda or have a server get me a refill on my cocktail I paid $12 for?  I’m parched from standing in all three lines for so long and need something to entertain me while I continue to wait on the sideline – why not another drink or some pickles to pass the time!

3. Your drinks are weak and overpriced.
I know you aren’t in the business of mixing cocktails – you’re in the business of tapping beer and “spanking your patties because they like it” but that doesn’t mean you can’t attempt to pour a decent cocktail.
lil prickAt least your Lil Prick cocktail with tequila and prickly pear juice lives up to its name with only a little bit of tequila!  No worries though, its excessive use of hot pink prickly pear juice sure does make  up for that lack of alcohol!  [That color’s all natural too, right?  Just like you advertise all your other ingredients to be?]

4. Your  burgers fall apart when I pick them up.
How can I eat a burger in a bun when I pick it up and it crumbles to the the table?

I’m not talking about JUST the veggie burgers [though those have it the worst!].  Your spanked patties are overstuffed into your “made fresh daily” buns and any normal eating practices must be abandoned in order to consume the burger.  I’ve watched countless times as my own veggie burger crumbled apart and my friend’s burgers become a deconstructed burger salad. [That is a culinary trend these days, maybe that’s what you’re going for here?]

Could you at least start serving your burgers with a fork? That way we have something to eat it with when it falls apart?

Or better yet, here’s a suggestion – put those crumbly patties in a wrapper!
They work marvelously at holding things together. I bet you can even get compostable wrappers provided by a local vendor so it fits into your whole recycle, be green, get local theme you not so casually market throughout your entire restaurant and website.  [Yes, hopdoddy even have signs telling us which color straws are recyclable and which aren’t – make sure to get  each in its proper bucket after enjoying a milkshake]

5. Your specials don’t make me feel special.
Again, I get it, you’re a BURGER place and by tradition, burger means beef.  But if you’re going to offer a special, let’s offer a special every now and again that appeals to your veggie lovers because as I mentioned, we vegetarians are being dragged to hopdoddy by our beef loving, burger eating friends and family.

And for the record, that one time in December, when you offered the Janis Joplin as a vegetarian burger special,  doesn’t count because that used to be on your menu before you traded it out for that other veggie burger. [Both fall apart]

Screen Shot 2014-01-30 at 8.14.18 PM

[I agree, this Janis Joplin burger looks tasty – but not when you end up eating it in pieces off your tray as a  brown rice, avocado, bready mess]

Here’s my veggie burger suggestion for you, hopdoddy: Revisit your Janis Joplin veggie burger recipe, add in extra binder to hold it all together [a little egg white might help!] and pair it with some goat cheese, arugula, caramelized onions, sautéed roasted mushrooms and the truffle aioli you’ve already got goin’ on.  #Winning

6. Your servers are only allowed to bring little cups of pickles.
You know, for being so big on “living green” you would think that if your patrons want a boatload of pickles, you’d rather have your servers put it in the big queso cups.  This would reduce waste and make your servers more efficient because they wouldn’t be running back and forth to the kitchen for more pickles every time they revisit my table.

Do the math: Big Cups of Pickles = Less Waste = More Efficient Servers = Happy Customers. Sounds simple to me. [And here’s where I compliment you hopdoddy –  you do pickles right which is why the big cups are a necessity, especially for your vegetarian diners]

Image7. Your salads are pathetic and will never constitute as a meal.
Before I tell you why your salads are pathetic, I do want to applaud you for at least attempting to put a salad on the menu at a burger joint!  But let’s be honest, these are more like oversized garnishes with a few hidden treasures. Your salads are nothing more than a bed of greens, with a dusting of cheese, and a sprinkling of “salad accents.”

The “salad accents” are so sparse that they get lost in the greens. To make your salad a bit more filling – why don’t you be a bit more heavy handed on the accents, include a denser vegetarian protein, and a toasted bun on the side.

By the looks of your salad, it seems you think salad is synonymous with anorexic but you’re wrong.  If I order a salad at a burger restaurant, I still want it to be filling WITHOUT having to add a burger, chicken, tuna or veggie patty on top.

salad Here’s my salad suggestion for you, hopdoddy: Go Greek.  You have all the basic ingredients already – start with your spinach & arugula base, add in some goat cheese, kalamata olives, cucumbers, tomatoes, red onion, chickpeas, hardboiled egg and a side of tzatziki or hummus (which can serve dual purpose by adding it to your current Greek burger or a future veggie burger special).  Toast up half a wheat roll cut into triangles sprinkled with paprika and you’ll have an all-star salad. #Winning…Again.

——-

Again, hopdoddy, I don’t hate you I’m just disappointed and tired of leaving frustrated and unfulfilled.  Granted, we all know I’ll be back, dragged there by my fiance or group a friends.  You’ll know it’s me, because I’l be the one making all the modifications.
