These Double Stuffed Oreo Truffle Brownies are made for the Oreo obsessed chocolate lover with Oreos sandwiched into every layer.

I’m not joking around when I say these are oh-em-gee brownies. These Double Stuffed Oreo Truffle Brownies sandwich a layer of Oreo truffle between Oreo cookie brownies, milk chocolate, and more Oreo cookie crumbs.

They are the kind of brownies you eat when your chocolate craving hits or you need an over-the-top treat to share with friends (Hello, Labor Day picnics!).

Classic Brownies

These Double Stuffed Oreo Truffle Brownies start with a classic brownie recipe.

Now, you could use a box brownie mix, but I promise you, homemade brownies are so much better.  What I’m sharing today is the recipe my Mom made me as a kid growing up and it’s still the best I’ve found.

The recipe’s from an ancient Betty Crocker cookbook she had (like literally, falling apart at the seams).  In fact, we used this recipe so much that the brownie page is covered in chocolate smudges.

Look for a glossy batter

This classic brownie recipe stars bars of unsweetened chocolate.  You can substitute cocoa powder + shortening (see note in recipe) but the results just aren’t the same.

The chocolate is melted down on the stovetop with butter-flavored Crisco.  You then whisk in the sugar and eggs until it reaches a ridiculously glossy consistency. This consistency is the key to delicious brownies.  This glossy batter will result in the thin crispy brownie crust that often cracks upon baking while keeping the center moist and gooey.

When you’re ready to bake the batter, you pour half into your tray, sprinkle in chopped Oreo cookies then layer in the remaining batter to sandwich the cookies within the brownies.

Oh-Em-Gee. Delicious.

After baking the brownies, you top them with an Oreo Truffle mixture which is just Oreo cookie crumbs combined with cream cheese (because why mess with a good thing!).

You roll out the truffle mixture into a thin sheet, layer it on top of the cooled brownies and smother both with a thin layer of melted chocolate and more cookie crumbs.

Lastly, let everything sit together until the chocolate hardens then slice and devour. If you want clean lines without splintering the chocolate when you slice into them, then you should let the chocolate harden at room temperature for about 2 hours before cutting.

Ingredients
  • For the Brownies
  • 4 ounces unsweetened chocolate bars*
  • ⅔ cup butter-flavored Crisco (shortening), plus more for greasing the pan
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs, at room temperature
  • 1¼ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 10 Oreos, roughly chopped into pieces

  • For the Oreo Truffle Layer
  • 20 Oreos
  • 4 ounces cream cheese, softened to room temperature

  • For the Milk Chocolate Topping
  • 1½ cups milk chocolate chips
  • 1 tablespoon Crisco
  • 5 Oreos
Instructions
  1. Make the Brownies: Heat oven to 350F. Grease a 9x13 inch pan with a thin layer of shortening and line it with parchment paper. Set aside.
  2. Melt the unsweetened chocolate and ⅔ cup Crisco in a large saucepan over medium heat until just melted. Remove from heat and whisk in the sugar and vanilla.
  3. Allow the mixture to sit for 3-5 minutes then whisk in the eggs, one at a time until fully combined.
  4. Fold in the flour, baking powder, and salt. Spread half the batter into the prepared pan and top with the chopped Oreo cookies. Top with remaining batter and using an offset spatula spread the batter into a single, even layer.
  5. Bake the brownies for 30-minutes. Remove from oven and let cool to room temperature before adding the truffle layer.
  6. Make the Oreo Truffle:. In a food processor, pulse the Oreos until crumb forms. Add the cream cheese and continue to pulse until fully combined. Turn the mixture out onto a large sheet of parchment paper and using a rolling pin, roll the mixture into a thin layer measure 9 inches x 13 inches. Once the brownies have cooled to room temperature, invert the parchment paper on top of the brownies and press the truffle layer into place.
  7. Make the Milk Chocolate Topping:. In a double boiler, melt the milk chocolate chips and shortening, stirring constantly. Go slowly so as not to burn the chocolate. Pour the melted mixture on top of the truffle-layered brownies and smooth it into a single, even layer. Sprinkle the Oreo cookie crumbs on top and let everything sit until the chocolate has hardened (~2 hours) before slicing. Slice into squares and serve. If you want clean lines without splintering the chocolate when you slice into them, then you should let the chocolate harden at room temperature for about 2 hours before cutting.
  8. Store cut brownies in the fridge for 3-5 days.
Notes
*Unsweetened Chocolate: These are unsweetened chocolate bars found in the baking aisle. If you cannot find unsweetened chocolate bars, you substitute 3 tablespoons of cocoa powder & 1 tablespoon of shortening (Crisco) for each ounce of chocolate.

St. Patrick’s Day Mint M&M & Oreo Cookie Crumb Cookies

Mint M&M’s and Oreo cookie crumbs come together to making a delicious St. Patrick’s Day treat.

I don’t want to say these cookies are ‘kitchen sink’ cookies but the ingredient combination was a result of what I had hand  — which included an unopened bag of mint M&M’s from Christmas, Oreo cookies that <3M never finished, and a remaining bag of white chocolate chips that I had no use for.

Fortunately, the flavor combination of mint, chocolate cookie crumb, and white chocolate paired together deliciously and resulted in a cookie recipe that was too good not to share!

And, since we were nearing St. Patrick’s Day, I chose to make these cookies St. Patty’s day themed by picking out all the red mint M&M’s from the holiday mix (you on the other hand, can just go buy a bag of the dark & light green mint M&M’s to make these on your own).

If you’re a fan of chocolate chip cookies or adore the Andes mint cookies often made around the holiday season, then you’ll enjoy my mint M&M’s and Oreo cookie crumb cookies.  The recipe base is similar to a standard chocolate chip cookie but the flavoring is a crunchy light mint flavor, mellowed by the bits of white chocolate chips.

Before baking the cookies, you need chill the dough for a quick 15-20 minutes then after forming the dough into ball you flatten the cookies to about half their original height. If you choose not to chill the dough before baking (or between batches), I found that the dough spreads a bit too much in the oven resulting in a very thin cookie. Once baked, the cookies should be slightly crisp which makes the Mint M&M’s and Oreo cookies perfect for dunking!

So, whether you’re looking to clean out your pantry as I did, or looking for an easy St. Patrick’s Day treat, these cookies are sure to please with their mint M&M’s and Oreo cookie crumb flavors.

Ingredients
  • 1 cup shortening
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 eggs
  • 1½ teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup min M&M's
  • 1 cup Oreo cookie crumbs*
  • ½ cup white chocolate chips
Instructions
  1. Preheat the oven to 350F and line two baking sheets with parchment paper or silicon baking mats and set aside.
  2. In the bowl of stand mixer, beat the shortening and sugars on medium-high until light and fluffy.
  3. With the mixer on medium, add in the eggs, 1 egg at a time, and mix to combine.
  4. Add in the vanilla extract and combine.
  5. Add in the flour, baking soda and salt and mix on low to combine, scraping down the sides as needed.
  6. Add in the mint M&M's and white chocolate chips and mix on low.
  7. Remove the bowl from the stand mixer and using a spatula, gently fold in the cookie crumbs so they don't break. Place the dough in the fridge to chill for 15-20 minutes**
  8. Using a 1.5 T scoop, place cookie dough balls on to the prepared sheet placing each 2 inches apart. Flatten the cookies to about half their original height. Bake for 8-9 minutes, rotating the pan halfway through the bake time. While the cookies bake, place the remaining dough in the fridge to chill.**
  9. Remove the cookies from the oven and allow them to cool on the pan 2-3 minute before transferring to a baking rack to cool completely.
  10. Store cookies at room temperature for up to 5 days.
Notes
*Make the Oreo cookie crumbs by pulsing 1.5 rows of Oreo cookies in the food processor for 8-12 seconds. The crumbs should be more on the chunkier side than the sandy side.
**If you do not chill the cookie dough before baking or between batches, the dough spreads too much in the oven, resulting in very thin and crispy cookies.

Oreo Mocha Java Ice Cream Cake

This Oreo Mocha Java Ice Cream Cake is decadent, chocolatey & delicious with an Oreo crust, layers of coffee ice cream, hot fudge & a dollop of whipped topping!

Since it’s still wicked hot here in the South (I’m not complaining, I love it) — I thought I’d continue my trend of no-bake desserts and venture into the coolest of categories with an Oreo Mocha Java Ice Cream Cake!

This ice cream cake begins with classic Oreo cookies, layers of coffee ice cream studded with chocolate chips, hot fudge sauce, a light dollop of whipped topping and more Oreos on top. It’s decadent, chocolatey and delicious. Perfect for those 100* days, an upcoming BBQ, or soon-to-be Labor Day picnics!

This Oreo Mocha Java Ice Cream Cake recipe is based on a family favorite and it’s a treat I’ve been enjoying since I was a little kid. When I was younger, my favorite part of the ice cream cake was the Oreo cookie crust and in all honesty, it probably still is!

Each summer when my Mom made this cake, usually for my Dad’s birthday, I’d first eat all the whipped cream and fudge sauce off the top of the cake. I’d then carefully work to scrape the ice cream off the Oreo cookie crust, trying to preserve the entire piece of crust, so I could enjoy it like an extra large Oreo cookie.  I loved how chocolatey, thick and decadent the crust tasted!

In fact, I was so obsessed with this ice cream cake crust, I remember begging my Mom to make just the crust for dessert one night. Obviously, she laughed and refused to make it, informing me that it was nothing more than crushed Oreos & butter. (Tangent: My Butter Oreo request only strengthens Paula Deen’s argument that butter makes everything better)

Since this recipe is based on my childhood favorite, I kept the Oreo cookie crust as a key ingredient in my ice cream cake but swapped in Coffee Java Chip ice cream to please my grown-up taste buds!

If you’re a fan of mocha flavored anything, I guarantee you’re going to love this Oreo Mocha Java Ice Cream Cake. It’s like biting into a Starbucks Frappuccino or the best Coffee Sundae you’ve ever hard. It’s crunchy, sweet, gooey and creamy all in one bite! The perfect combination of flavors and textures.

Although I chose to make this ice cream cake with coffee flavored ice cream, creating an Oreo Mocha Java Ice Cream Cake, this recipe can truly be used as a base to create all sorts of flavor combinations by simply swapping your ice cream flavor, sauce, and toppings!

Sticking with the same Oreo cookie base and whipped topping ‘frosting’, here are a few other flavor combinations to try out if coffee ice cream isn’t your jam —

This ice cream cake begins with the classic Oreo cookie, layers on coffee ice cream studded with chocolate chips, hot fudge sauce, a light dollop of whipped topping and more Oreos on top. It’s decadent, chocolatey and delicious.
Ingredients
  • 24 Oreo cookies
  • 6 tablespoons unsalted butter, melted
  • 2 quarts coffee or java chip ice cream, softened at room temperature for 15-30 minutes
  • 1 cup hot fudge sauce, like Mrs. Richardson's
  • 1 8-ounce container of whipped topping, like Cool Whip
  • Additional Oreos, for topping
Instructions
  1. Lightly grease a 9-inch springform pan with a bit of the melted butter and set aside
  2. Place 24 Oreos in a food processor and pulse until you reach a sand-like consistency
  3. Pour in the melted butter and pulse 3-4 more times to combine
  4. Empty the Oreo-butter mixture into the springform pan and press it into the bottom and sides of the pan, to form a bit of a dam or crust around the edges
  5. Place the cookie crust in the freezer to set for 30 minutes
  6. Once set, remove the crust from the freezer and smooth the softened ice cream into the pan, using a spatula to evenly distribute the ice cream across the crust
  7. Place the cake back in the freezer to set for another 30-60 minutes
  8. Once the ice cream has set, heat the hot fudge sauce in the microwave for 30-60 seconds until warm but not bubbling
  9. Pour the warm hot fudge on top of the ice cream, spreading it evenly all the way to the edges of the cake
  10. Return the cake to the freezer to set until serving
  11. Before serving, allow the cake to thaw for 5-10 minutes, which will make cutting the cake a bit easier
  12. to slice the cake. Remove the springform container and top each slice with a dollop of whipped topping and additional Oreos.

Oreo Mint Chocolate Cupcakes

These cupcakes are ridiculously delicious. I mean, they combine America’s favorite cookie, the Oreo, and mint — probably the best flavor combination to ever exist in the world of desserts! They’re super chocolatey, moist and fudgy. Their chocolate level is definitely in line with that of a brownie, the only difference being these are light and fluffy, rather than dense and crumbly.
