Everyday Peanut Butter Cookies

These Everyday Peanut Butter Cookies are my Mom’s peanut butter cookie recipe made with creamy peanut butter and the classic criss-cross markings.

It’s National Peanut Butter Cookie Day so I thought I’d pop in for a quickie recipe post and share my Mom’s peanut butter cookie recipe.

This is one of those no-fuss peanut butter cookie recipes. It’s straightforward, delicious, and easy to make but requires you to use classic peanut butter for it to bake up properly.

Everyday Peanut Butter Cookie

It’s really all about the peanut butter.

Now, I’m all about natural PB or crunchy PB or PB with flax, chia, or coconut mixed in.  But this is NOT the recipe to use your $10 jar of natural, organic, super-powered-up peanut butter.

It just won’t taste right.  The texture will be all wrong, the fat ratio will be all sorts of screwed up, and you’ll be unhappy.

So whip out your Jif or Skippy or Peter Pan or heck, even your store-brand peanut butter, and put it to use in these Everyday Peanut Butter Cookies.  Personally, I grew up a Peter Pan & Jif girl but since moving to Texas, I really love the HEB brand peanut butter.  It just does it for me and it’s what I used when making this recipe.

Bakery-perfect criss-cross marks.

IMO, an everyday peanut butter cookie has to have the classic criss-cross made with a fork.  The key to making these marks is to use a standard dinner fork, dip it in some flour then push straight down on top of your cookie ball.  Dip the fork again in flour,and turn the fork perpendicular to the marks you just made and again, push straight down.

Whatever you do, do not drag the fork across the cookie dough.  This will not make the perfect little checkered square I know you’re looking for.

Serves: 3 dozen
Ingredients
  • ½ cup unsalted butter, softened to room temperature
  • ½ cup butter flavored Crisco
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ cup creamy peanut butter
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 1/12 cups flour
Instructions
  1. Preheat the oven to 350F and line baking sheets with parchment paper or baking mats*
  2. Beat the butter and Crisco together in the bowl of a stand mixer for 2-3 minutes.
  3. Once light and fluffy, add in both sugars and beat another 1-2 minutes.
  4. Add the eggs, 1 at a time, beating with each addition.
  5. Mix in the vanilla extract and peanut butter.
  6. Mix in the salt, baking soda, and flour until fully combined.
  7. Scoop into tablespoon-size balls (or use a medium cookie scoop) and place on a prepared baking sheet.
  8. Use a floured fork to make criss-cross designs on top (see tips in the blog post above).
  9. Bake for 10-minutes.
  10. Remove from oven and allow to cool on a cooling rack.
  11. Store in Tupperware for 1 week at room temperature or freeze for up to 3 months.
Notes
*I bake on the convection setting, adjust the temperature accordingly for your own oven.

My House Salad Dressing: Everyday Balsamic Vinaigrette

My house salad dressing, Everyday Balsamic Vinaigrette, is a simple, homemade salad dressing inspired by a trip to Greece. It pairs well with most salad combinations and can be used as a base recipe to create other dressing variations.

Everyday Balsamic Dressing

I eat a lot of salads.  I also know salad dressings are one of the most processed foods. A lot of store-bought dressing contain added sugars, fats, and chemicals used for emulsion. Knowing this, I decided to create my own salad dressing, which I call Everyday Balsamic Dressing. This is what I consider to be my house dressing, nicknamed Everyday Balsamic because I use it almost daily.

Greek Inspired

My Everyday Balsamic Dressing is inspired by the salads I ate while visiting Greece a few years ago.  In Greece, the standard Greek salad is served with olive oil, red wine vinegar, and dried oregano.

These three ingredients, olive oil, vinegar, and oregano are the base for my dressing. To the three base ingredients, I add dijon mustard for spice and to help thicken the dressing then finish it off with the standard salt and pepper seasoning.

My Standard Salad

I love this Everyday Balsamic dressing because it pairs so well with most styles of salad.  My go-to salad base includes greens, bell pepper, scallions, cucumber, and garbanzo beans. From there, I add a protein plus my Everyday Hummus and baby carrots for dipping!

My Everyday Balsamic Dressing is also a great base recipe for creating other variations. When modifying the recipe, try to keep the 1:1 ratio of oil to vinegar to help maintain the dressing consistency we’re all familiar with.

A few of my favorite variations include:

  • Use red wine, sherry, or rice wine vinegar in place of the balsamic vinegar
  • Add a 1/2 teaspoon of garlic granules
  • Swap the oregano for Italian Seasoning
  • Make it spicier by adding a 1/2 teaspoon of red pepper flakes
  • Create a ranch vinaigrette by adding a tablespoon of seasoning

No matter how you modify the recipe, it’s sure to be a success and will hopefully become your house dressing in the same way as it’s become mine!

Ingredients
  • ¼ cup quality extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoon dijon mustard
  • ½ teaspoon kosher salt
  • ½ ground black pepper
Instructions
  1. Pour all ingredients into a small jar
  2. Place the lid on the jar and shake vigorously to combine
  3. Serve immediately or store at room temperature for up to 5 days
